Set in one of rural Malta’s most picturesque corners, a visit to the Tal-Kanċillier olive oil press offers a glimpse into the journey from olive to bottle. Nestled beneath the bastions of Mdina, this small but efficient press is run by Anthony Bonavia together with Frank Borg and Anthony Busuttil, whose shared passion keeps this age-old tradition alive.
Surrounded by history and countryside, guests are introduced to the rhythms of olive cultivation and oil production. During the harvesting season, you may be lucky enough to see the press in action, though this remains a seasonal process and cannot always be guaranteed. Regardless of timing, the stories, aromas and setting bring the craft to life.
The experience concludes with a guided tasting of extra virgin olive oil produced on site, served generously over freshly baked Maltese bread. Olive oil and other local delicacies may also be available to purchase, depending on the season and current stock.
Tal-Kanċillier is our primary venue for this experience; however, if it is unavailable, alternative arrangements will be made so the experience can still go ahead.
